How we test our recipes

Last updated

Draft. Only describe what you really do. Readers and search engines check this page against the recipes.

Our process

  1. Research. We read what people search for and the questions they ask about the dish.
  2. First cook. We cook a first version and write down every amount and time.
  3. Retest. We cook it again [number] times, changing one thing at a time.
  4. Photograph. We photograph the final version, including the steps where people usually go wrong.
  5. Publish. The recipe goes live with our real testing notes in the “What we learned testing it” box.

Ingredients and equipment

[Where you shop, which brands you use when it matters, and the equipment in your kitchen: oven type, blender, pans.]

Copycat recipes

[How you compare a copycat with the original: tasting side by side, how many rounds, what you adjust.]

Nutrition

[How nutrition is calculated, e.g. “with a calculator based on USDA FoodData Central”. Values are estimates.]

Updates and corrections

When a reader finds a problem, we retest and update the recipe, and show the “Updated” date. [How readers can report a problem: link to /contact/.]
